Rabat and Salé are definitely worth stopping by: the medina, Kasbah of the Oudayas, Chellah, Hassan Tower, Museum of History and Civilizations, the three souks of Salé, and the Merinid Medersa, etc.
Fès and/or Meknes (with or without Volubilis) are also great options.
All three cities are very different from each other.
Getting around by train is no problem. Schedules can be checked on the ONCF website. Roughly one train per hour for all three destinations. Casablanca and Rabat each have two stations. Given the prices, don’t hesitate to go for first class.
Safety in the cities isn’t an issue.
I can’t fully answer your other question about age, eye color, or hair color. Moroccans are tolerant, modest, and welcoming, but there are also some boorish people around. It’s up to you to adapt your clothing style.

The train is reliable, let's say like the French SNCF. I'd allow a big buffer if I had a flight to catch, but for city-to-city trips, it's perfect—comfortable and affordable.
Definitely, Rabat, Salé, Meknès-Moulay Idriss, and Fès have plenty to see and can keep you busy for 2 weeks. There isn’t much nature aside from Moulay Idriss, or maybe Azrou, but it’s not that exceptional either.
By train with the TGV, another option could be to visit Tangier and then take a shared taxi to Chefchaouen. From Chefchaouen, there are some really nice hikes to do.
I’m a man, but I’ve seen creeps of all ages in Morocco bothering women your age and older. Of course, like anywhere, you notice the bad ones, and the vast majority—who would never dare approach you but will help you with kindness if you ask—go unnoticed.
Generally, whether you're a man or a woman, just act as you would at home: don’t follow strangers and don’t hesitate to say no politely but firmly, and you’ll avoid most problems.

Casablanca is pretty chill. Of course, there are neighborhoods to avoid, like anywhere else.
The medina is really nice.
You should try boubouch—it starts around 5 PM if you like snails... It’s divine.
When it comes to food, don’t hesitate to try things you won’t find in restaurants back in France.
You won’t be bothered any more than you would in France.
Personally, I find people leave you alone more in the working-class neighborhoods.
