Non, les Canadiens qui font un arrêt de moins de 72 heures avec un bateau de croisière n'ont pas besoin de visa. J'ai moi-même vérifié auprès de l'ambassade de Turquie à Ottawa et je vous mets un copier/coller de la réponse que j'ai reçue.

Dear Sir/Madam,
Canadian ordinary passport holders can obtain the tourist visa for multiple entry at the point of entry in Turkey. Visa fee at the point of entry is 60 USD.
For cruise passengers: Those cruise passengers coming to a Turkish port of call by a cruise ship and thereafter leave Turkey by the same cruise ship for another country, are exempt from visa for a maximum period of 72 hours (with the permission given by the local security authorities).
