Hi,
Quito is still quite affordable compared to many capitals. For a large room or a small apartment in a slightly outlying neighborhood, you can find decent places without blowing your budget, especially if you avoid the overly touristy areas.
That said, between a house, apartment, shared flat, or a homestay, the comfort and lifestyle vary a lot depending on what you're looking for.
And when it comes to food, if you eat local and at small restaurants, it stays really reasonable :)
