Hiking and biking in the Alps

Hi,
My boyfriend and I are looking to spend a week in the Alps at the end of August. But since we only know the region in winter, I have no idea where to start!
I’d like to avoid the big resorts with apartment blocks and instead head for a typical village, with great hikes (on foot and by bike) and ideally near a lake, river, or water spot.
All suggestions are welcome!!! :)
