Hi there, I need to apply for an ESTA: we’ll be on a cruise from Barcelona and will have a stopover in San Diego before disembarking two days later in Los Angeles. From there, we’ll continue our trip on our own, all the way to Las Vegas, where we’ll catch our flight back to Paris. So our point of entry into the U.S. will be San Diego. The form then asks if we’re in transit, and if not, to provide contact details for a U.S. contact (hotel or otherwise). But we don’t yet know what we’ll be doing there—we’ll actually be traveling around since we’re heading to San Francisco and Las Vegas without any prior reservations. It's not mandatory to provide accommodation details; it's mentioned if you read the ESTA document carefully. Can't remember exactly off the top of my head...

Unless there’s been a recent change, the ESTA doesn’t apply to arrivals by sea or land in the USA. Since this is a cruise, the company you’ve chosen should be able to tell you what to do. For the last stop in San Diego, they’ll likely ask you to fill out the old I-94 forms (if I remember correctly). With a French passport, one entry gives you a max of 90 days for tourism and allows as many entries as you want. So disembarking in Los Angeles is covered by those same forms.

Just a heads-up, the ESTA applies to all arrivals:

All eligible nationals or citizens of VWP countries who plan to travel to the United States for temporary business or pleasure under the VWP must receive authorization through ESTA before boarding a U.S.-bound airplane or vessel or presenting themselves for admission at a United States land border port of entry.
