One idea would be to book two accommodations—one week near Olhão and another near Lagos.

From Olhão, you can explore the east: Olhão itself, Tavira, and the small coastal villages before and after with beach stops, as well as the islands of Faro/Olhão, Faro’s historic center, Loulé, and if you like azulejos, the São Lourenço church in Almancil.

On the day you transfer between the two accommodations, you could stop in Albufeira and at Praia da Falésia. Or take the inland route: Alte, Salir.

From Lagos, explore the west: Lagos itself, the east coast with Alvor, Ferragudo, Carvoeiro, Praia da Marinha, Benagil, and Nossa Senhora da Rocha. The west coast with Praia da Luz, Burgau, and Salema. Inland, Monchique and Silves. The west coast road from Sagres to Odeceixe has beautiful viewpoints in Sagres, the cliffs of Vila do Bispo, near Carrapateira, and near Aljezur.

I’ve probably forgotten some things—I hope others will add to this. You can already see what appeals to you in my list. I don’t necessarily love everything, but I don’t know your tastes. It also depends on when you’re coming, as some places get crowded depending on the season.
