What do you mean by "assistance"?

Air France and Thai Airways haven’t had any agreement since 2005, so you’ll need to collect your luggage at Roissy Terminal 2 and make your way to Terminal 1 using the CDGval to check in with Thai Airways on your own. Since the Thai Airways flight departs around 12:30 PM or 11:30 AM depending on the season, you’ll likely need to arrive the day before and book a hotel at CDG. You must be at check-in 3 hours before departure. Unless there’s an early morning flight from Brest around 6:30 AM/7:00 AM, but that’s still risky.

Just a reminder, Air Calin also flies direct from CDG to Bangkok. Check prices depending on your dates.

If you mean you're a passenger who needs assistance at the airport, you'll have to make the request with both airlines, but yes, it's possible. If you're heading to Rennes, you also have options via Amsterdam.

Yes, there is one, but I agree with you—it’s always a bit risky. Driving to Paris is often the best option for quality service outside the SkyTeam network, which western Brittany residents are pretty much captive customers of.

With a budget and for peace of mind, taking a taxi isn’t out of the question either. From Rennes, you’re looking at 700 to 900 € per trip to Roissy Airport. It might seem expensive, but it’s a service, a comfort, and it can be split among three passengers. Compared to flight tickets costing 3000 or 4000 €, it might just be worth it.

If you’re flying business class on Thai Airways, you don’t *really* need to be there three hours early, though it’d be a shame to miss out on the Star Alliance lounge, which was recently redone.
